4 oz Shredded Cabbage & Carrots
1 cup Panko Breadcrumbs
4 tbsp Buffalo Sauce
⅔ cup All-Purpose Flour
2 tsp Honey
1 tbsp Apple Cider Vinegar
2 tbsp Mayonnaise
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Cut the potatoes into 1-inch wedges. Spread on a sheet pan; drizzle with olive oil, season, and toss to coat. Roast 22-26 minutes until browned and fork-tender. Air fryer option: 400°F for 12-15 minutes.

Meanwhile, place the flour and breadcrumbs on two separate large plates; season each. Beat the egg(s) in a bowl with salt and pepper. Pat the chicken dry. Sandwich between plastic wrap and pound to 1/4-inch thick; discard wrap. Season both sides. Coat in flour (tap off excess), then beaten egg (let excess drip), then breadcrumbs (press to adhere). Transfer to a plate.

Heat a thin layer of oil in a large nonstick pan over medium-high. When breadcrumbs sizzle immediately, add the breaded chicken in batches. Cook 5-8 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate and season immediately. USDA minimum: 165°F for chicken.

In a large bowl, whisk together the vinegar and half the mayonnaise; season. Add the cabbage and carrots; stir to coat. In a separate bowl, whisk together the honey, remaining mayonnaise, and as much buffalo sauce as you like. Serve the chicken with the slaw and roasted potato wedges. Serve the buffalo sauce on the side.
