Position a rack at the top and preheat the oven to 450°F. Rinse and dry all produce. Trim and halve the zucchini lengthwise, then cut crosswise into 1/2-inch half-moons. Finely chop the sun-dried tomatoes. Zest and quarter the lemon.

Toss the zucchini and half the sun-dried tomatoes in a small oven-ready tray with 2 tablespoons olive oil, half the Italian seasoning, 1 teaspoon garlic powder, salt, and pepper. Roast on the top rack until golden and tender, 18-20 minutes. (For 4 servings, divide between two small trays and roast side by side.)

Pat the salmon dry and arrange skin-side down in a large oven-ready tray. Season with the remaining Italian seasoning, 1 teaspoon garlic powder, salt, and pepper. Scatter the remaining sun-dried tomatoes on top and drizzle generously with olive oil. When the zucchini has 10 minutes left, add the salmon to the top rack and bake until cooked through, 8-10 minutes. USDA minimum: 145°F for fish.

While everything roasts, combine the mayonnaise, 1 teaspoon garlic powder, a squeeze of lemon juice, salt, and pepper in a small bowl. When the salmon has 5 minutes left, halve and toast the ciabatta.

Divide the zucchini between plates using a slotted spoon. Pour the pan drippings over the toasted ciabatta and cut on a diagonal. Plate the salmon alongside the zucchini. Top the fish with the lemon zest and a squeeze of lemon juice, then drizzle with the garlic aioli. Serve with the ciabatta and remaining lemon wedges.
