1 Avocado
8 oz. Slaw Mix
5⅗nfl. oz.nCoconut Milk
4 oz. Frozen Mangoes
1 Lime
2 oz. Creme Fraiche
2 oz. Chimichurri
1 oz. Pepitas
1 tsp. Garlic Salt
How to make it

Step 1
Bring a medium pot with the rice, coconut milk, 2 1/2 cups water, and 1/4 tsp. salt to a boil (break up the coconut milk if solidified — that is normal). Once boiling, reduce to a simmer, cover, and cook until the rice is tender, 15-18 minutes. Remove from heat, stir in a pinch of salt, and keep covered. Continue with the recipe while the rice cooks.

Halve the avocado, remove the pit, scoop out the flesh, and cut into 1/2-inch dice. Coarsely chop the mangoes (if frozen, rinse under cold water until thawed). Halve and juice the lime. Pat the chicken dry and season both sides with garlic salt and 1/4 tsp. pepper.

Place a large nonstick pan over medium heat and add 2 tsp. olive oil. Add the chicken and cook until browned and reaching 165°F, 5-7 minutes per side. Remove from heat. Continue with the recipe while the chicken cooks.

In a mixing bowl, combine 4 tsp. lime juice, 4 tsp. olive oil, 1/4 tsp. salt, the slaw mix, mangoes, avocado, and pepitas. Set aside.

In a small bowl, combine the chimichurri (to taste), crème fraîche, 2 tsp. water, and a pinch of salt. Divide the rice between plates. Slice the chicken if desired and arrange on top. Drizzle with the chimichurri crema and serve the mango avocado slaw alongside.
