4 oz Applewood Smoked Uncured Bacon
1 each Delicata Squash
½ cup Brown Rice
1 each Yellow Onion
1 each Lime
2 each Scallions
1 each Bell Pepper
⅓ cup Guajillo Chile Pepper Sauce
1 oz Sliced Pickled Jalapeño Peppers
1 tbsp Mexican Spice Blend (Ancho Chile Powder, Smoked Paprika, Garlic Powder, Ground Cumin & Dried Mexican Oregano)
¼ cup Guacamole
2 oz Shredded Monterey Jack Cheese
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Trim the squash and halve lengthwise; scoop out seeds. Line a sheet pan with foil. Place the squash cut-side down, drizzle with olive oil, season, and turn to coat. Roast 20-22 minutes until browned and fork-tender. Leave the oven on. Carefully flip to cut-side up.

Line a second sheet pan with foil. Arrange the bacon in an even layer. Roast 12-15 minutes until cooked through and crispy. Transfer to a paper towel-lined plate and roughly chop.

Meanwhile, combine the rice, a big pinch of salt, and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 23-25 minutes until absorbed. Fluff with a fork.

Halve, peel, and medium dice the onion(s). Slice the scallions, keeping the white bases and green tops separate. Stem the bell peppers, halve lengthwise, seed, and medium dice. Quarter the limes. Roughly chop the jalapenos; wash hands immediately after. In a bowl, combine the guacamole and the juice of 2 lime wedges (4 wedges for 4 servings).

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the onion(s), white scallion bases, bell peppers, spice blend, and as much jalapeno as you like; season. Cook stirring occasionally 4-5 minutes until lightly browned and softened. Add the juice of the remaining lime wedges; stir and taste.

Add the cooked vegetables, chopped bacon, guajillo sauce, half the Monterey Jack, and a drizzle of olive oil to the pot of rice; season and stir. Divide half the filling between the roasted squash halves. Top with the remaining Monterey Jack and drizzle with olive oil.

Roast 2-3 minutes until heated through and the cheese is melted. Let stand 2 minutes. Divide the remaining filling between serving dishes. Top with the stuffed squash. Garnish with the lime guacamole and green scallion tops.
