Bring a medium pot of salted water (3/4 full) to a boil. Add the farro and cook uncovered 18-20 minutes until tender. Drain and return to the pot. Add the romesco sauce and a drizzle of olive oil; season with salt and pepper. Stir to combine.

Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Pit and roughly chop the dates; place in a bowl, cover with warm water, and soak at least 5 minutes. Pat the chicken dry. In a large bowl, whisk together the honey, harissa paste, and a drizzle of olive oil. Add the chicken, season with salt and pepper, and stir to coat.
