½ cup Semi-Pearled Farro
1 tsp Whole Dried Oregano
1 each Lemon
1 each 15.5-oz can Cannellini Beans
1 ½ oz Feta Cheese
1 oz Pitted Niçoise Olives
2 clove Garlic
6 oz Carrots
1 oz Sliced Roasted Red Peppers
1 ½ tbsp Red Harissa Paste
3 oz Baby Spinach
4 oz Grape Tomatoes
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Add the farro and cook uncovered 18-20 minutes until tender. Drain and return to the pot.

Rinse and dry all produce. Peel and roughly chop 2 garlic cloves. Drain and rinse the beans. Quarter and deseed the lemon. Peel the carrots, halve lengthwise, and thinly slice crosswise. Halve the tomatoes. Roughly chop the olives and peppers. In a bowl, combine the crumbled feta, chopped olives, chopped peppers, and 1 tablespoon olive oil; season with salt and pepper. Set aside to marinate at least 10 minutes.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the garlic and stir constantly 30 seconds to 1 minute until slightly softened. Add the drained beans; season with salt, pepper, and enough oregano to coat. Cook stirring occasionally 2-3 minutes until heated through. Transfer to a bowl with the juice of 2 lemon wedges and 1 tablespoon olive oil. Taste and season. Cover with foil. Wipe out the pan.

Pat the chicken dry and season both sides with salt and pepper. Heat a drizzle of olive oil in the same pan over medium-high. Cook 6-9 minutes per side until browned and cooked through. Transfer to a board and slice crosswise. USDA minimum: 165°F for chicken. Leave the fond in the pan.

Cook stirring occasionally 2-3 minutes until softened. Add the harissa paste and 2 tablespoons water (it may spatter). Stir constantly 30 seconds to 1 minute. Add the spinach and stir frequently 1-2 minutes until wilted. Remove from heat.

Add the cooked vegetables and a drizzle of olive oil to the farro; stir to combine. Taste and season. Serve topped with the sliced chicken, cooked beans, and marinated feta. Offer the remaining lemon wedges on the side.
