2 tbsp Mayonnaise
3 oz Baby Spinach
2 tsp Gochujang
2 tbsp Soy Glaze
4 oz Sugar Snap Peas
1 each Single-Use Aluminum Tray
How to make it

Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Rinse and drain the rice. Remove tough strings from snap peas if desired. Lightly oil the tray. Combine the spinach, rice, sauteed aromatics, sesame oil, and kimchi in the tray. Add 1 cup water. Season and stir thoroughly.

Cover tightly with foil and bake 30 minutes. Remove the foil (leave oven on) and stir. Add the snap peas in an even layer; drizzle with olive oil and season. Make 2 shallow wells. Crack an egg into each; season. Return to the oven uncovered 5-7 minutes until the whites are set, yolks reach your desired doneness, and snap peas are fork-tender.

In a bowl, combine the mayonnaise, soy glaze, and as much gochujang as you like. Serve the baked tray drizzled with the sauce. Top with sesame seeds.
