⅓ cup Guajillo Chile Pepper Sauce

2 oz Shredded Cheddar & Monterey Jack Cheese Blend
¼ cup Sour Cream
3 tbsp Roasted Peanuts
⅓ cup Crispy Onions

Preheat the oven to 450°F. Rinse and dry the spinach. Drain and rinse the beans. In the tray, combine the spinach, drained beans, guajillo sauce, squash, and as much chile paste as you like. Add 1/4 cup water. Season with salt and pepper and stir thoroughly.

Tear the chorizo into bite-sized pieces and arrange in an even layer. Cover tightly with foil and bake 28-30 minutes until the squash is fork-tender and the chorizo is cooked through. Remove the foil (leave oven on). Top evenly with the cheese. Return to the oven uncovered 4-6 minutes until the cheese is melted.
