Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Rinse and drain the rice. Lightly oil the tray. In the tray, combine the rice, soy sauce, sauteed aromatics, mushrooms (torn into pieces), and 1 cup water. Season and stir thoroughly.

Tear the turkey into bite-sized pieces and arrange in an even layer. Season with salt and pepper. Cover tightly with foil and bake 40-42 minutes until the rice is tender and the turkey is cooked through. Remove the foil. Add the hoisin sauce and stir to combine.

In a bowl, combine the mayonnaise and as much sambal oelek as you like. Tear off the root end of the lettuce and separate the leaves. Serve the lettuce leaves, baked tray, spicy mayo, crispy onions, and togarashi separately for assembling. Fill each cup using 2 lettuce leaves.
