2 oz Shredded Cheddar & Monterey Jack Cheese Blend
Position a rack in the center of the oven and heat to 450°F. Rinse and dry the spinach. Drain and rinse the beans. In the tray, combine the spinach, drained beans, cream, tomatillo sauce, spice blend, and mirepoix; stir. Add 1/4 cup water, season with salt and pepper, and stir thoroughly. Tear the chorizo into bite-sized pieces, arrange on top, and season. Cover tightly with foil and bake 10 minutes. Leave the oven on and remove.
