10 oz Baby Bok Choy
2 clove Garlic
1 tbsp Rice Vinegar
1 tbsp Sesame Oil

How to make it

Combine the rice, a big pinch of salt, and 1 cup water in a small pot. Bring to a boil over high, reduce to low, cover, and cook undisturbed 12-14 minutes until absorbed and tender. Fluff with a fork.

While the rice cooks, rinse and dry all produce. Trim the bok choy root end and roughly chop. Halve the cucumber lengthwise and thinly slice crosswise. Peel 1 garlic clove and finely chop into a paste.

Heat a thin layer of oil in a nonstick pan over medium-high. When a dumpling sizzles immediately on contact, add the dumplings in an even layer. Cook undisturbed 3-4 minutes until golden brown. Add 1/4 cup water (it may spatter). Loosely cover with foil and cook undisturbed 1-2 minutes until heated through and the water cooks off. Remove from heat.

In a bowl, combine the vinegar, sesame oil, and as much garlic paste as you like. Add the bok choy and sliced cucumber. Drizzle with olive oil, season, and stir. Serve the cooked dumplings over the rice. Serve with the salad and ponzu sauce on the side.
