Ingredients
10 oz Smoky-Flavored Poblano Pork Sausage
½ cup Long Grain White Rice
1 each Poblano Pepper
6 oz Carrots
4 oz Mushrooms
2 each Scallions
1 tbsp Hot Sauce
2 tbsp Mayonnaise
1 tbsp Light Brown Sugar
¼ cup Panko Breadcrumbs
½ tbsp Cajun Spice Blend (Smoked Paprika, Ground Yellow Mustard, Onion Powder, Garlic Powder, Whole Dried Oregano, Whole Dried Thyme & Cayenne Pepper)
How to make it
1
Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water in a large pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff and cover to keep warm.
2
Rinse and dry all produce. Cut the mushrooms into bite-sized pieces. Peel the carrots; halve lengthwise and thinly slice crosswise. Slice the scallions, keeping the white bases and green tops separate. Stem the pepper, halve lengthwise, seed, and medium dice. Wash hands immediately after. In a bowl, combine the mayonnaise, a pinch of the spice blend, and as much hot sauce as you like; season.
3
In a bowl, combine the sausage, sugar, and breadcrumbs; gently mix until just combined. Shape into 10 tightly packed meatballs.
4
Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the meatballs. Cook turning frequently 7-9 minutes until browned on all sides and cooked through. USDA minimum: 160°F for pork. Transfer to a plate, leaving the fond. Cover with foil.
5
Heat a drizzle of olive oil in the pan of fond over medium-high. Add the mushrooms in an even layer. Cook undisturbed 3-4 minutes until browned. Add the carrots, white scallion bases, diced pepper, and remaining spice blend; season. Cook stirring occasionally 4-5 minutes until softened. Transfer to the pot of rice and stir. Taste and season. Serve the rice topped with the cooked meatballs, spicy mayo, and green scallion tops.
