How to make it

Bring a large pot of water to a boil. Wash and dry produce. Trim and slice scallions whites into 1/2 inch batons, thinly slice the greens.

Once water is boiling, add noodles to pot. Cook, stirring occasionally, until al dente, 5-7 minutes, then drain.

Pat pork dry with paper towels; thinly slice into strips crosswise. Season pork all over with salt and pepper.

Heat a drizzle of oil in a large pan over medium high heat. Add pork in an even layer and cook, stirring occassionally 3-5 minutes. Transfer pork to a plate and wipe out pan.

Heat another drizzle of oil in the same pan used for the pork. Add the scallion whites, coleslaw mix, garlic powder, salt and pepper. Cook, sitrring occassionally, until the scallions are fragrant and the veggies start to soften, 1-2 minutes.

Return pork back to pan with veggies. Add sweet soy glaze, sweet thai chili, as much sriracha as you'd like, and 1/3 cup of water (2/3 cup for 4) to pork and veggies; stir to combine. Add noodles and remove pan from heat. Stir in 1 TBSP butter (2 TBSP for 4). Taste and season with salt and pepper if desired.

Divide lo mein between shallow bowls. Top with scallion greens.
