Saved instructions are reproduced below. Follow the current package or recipe if it differs.
Step 1
Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff with a fork.
Step 2
Rinse and dry all produce. Halve the radishes lengthwise and thinly slice crosswise; place in a bowl with the sesame oil and vinegar. Season and set aside to marinate. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Peel and finely chop the ginger to get 2 teaspoons (4 tsp for 4 servings). Combine the garlic and ginger in a bowl. Trim the bok choy root ends and thinly slice crosswise.
Step 3
Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the beef, garlic, and ginger; season. Cook stirring frequently, breaking the meat apart, 4-5 minutes until lightly browned. Drain off excess oil. Add the sugar, soy sauce (it may spatter), and sliced bok choy. Cook stirring frequently 1-2 minutes until combined and the beef is cooked through. Taste and season.
Step 4
In a bowl, combine the mayonnaise, 1 teaspoon water (2 tsp for 4 servings), and as much gochujang as you like. Taste and season. Serve the rice topped with the cooked beef and bok choy, marinated radishes (including any liquid), and spicy mayo.
