Rinse and dry all produce. Split the buns. Slice the cucumbers into thin rounds. Mix the crispy onions with up to half the spice blend to taste. Heat a drizzle of olive oil in a large nonstick pan over medium-high. Toast the buns cut-side down for 30 seconds to 1 minute until lightly golden. Set on a board and tent with foil.

Add the pulled meat, shredding any large pieces, then the barbecue sauce, as much of the remaining spice blend as you like, and 2 tablespoons water (4 tbsp for 4 servings); season to taste. Stir frequently 2-3 minutes until the sauce thickens slightly and the protein is heated through. Remove from heat.

Toss the arugula and cucumber rounds with the vinegar and a drizzle of olive oil; season with salt and pepper. Build the sandwiches on the toasted buns with the sauced meat, goddess dressing, spiced crispy onions, and as many peppers as you like. Serve alongside the salad.
