Take the noodles out of the refrigerator. Rinse and dry all produce. Stem the peppers, halve lengthwise, seed, and medium dice. Slice the scallions, keeping the white bases and green tops separate. Trim the bok choy root ends and roughly chop. In a bowl, combine the soy glaze, sesame oil, vinegar, 1/4 cup water (1/2 cup for 4 servings), and as much gochujang as you like.

Heat a drizzle of olive oil in a medium pot over medium-high. Add the beef; season. Cook stirring frequently, breaking the meat apart, 5-7 minutes until browned and cooked through. Drain off excess oil. Transfer to a plate, leaving the fond.

Add the diced peppers and white scallion bases to the pot of fond; season (add olive oil if dry). Cook over medium-high stirring occasionally 2-3 minutes until lightly browned. Add the bok choy; season. Cook stirring frequently 2-3 minutes until the vegetables soften and the bok choy leaves wilt.

Separate the noodles by hand. Add the noodles, cooked beef, and sauce (it may spatter) to the pot. Cook stirring frequently 1-2 minutes until the noodles are coated and heated through. Remove from heat. Taste and season. Serve topped with the green scallion tops.
