Roasted Sweet Potatoes with Honey and Cinnamon

These honey cinnamon roasted sweet potatoes are the side I make on repeat all fall and winter. The edges caramelize into something almost candy like while the centers stay soft and creamy. Four ingredients and one pan, which is exactly my kind of side dish.

Ingredients

  • 4 sweetpotatoes, peeled and cut into 1-inch cubes
  • 1/2 cupextra-virgin olive oil, plus more for drizzling potatoes after cooked
  • 1/4 cuphoney
  • 2 tbspground cinnamon
  • Salt andfreshly ground black pepper

Instructions

  1. 1Step 1Preheat oven to 375 degrees F.
  2. 2Step 2Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.
  3. 3Step 3Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.
