Ingredients
10 oz Chicken Breast Strips
2 each 15.5-oz can Chickpeas
½ cup Cream
2 tsp Vadouvan Curry Powder
2 each 8-oz can Tomato Sauce
2 oz Sweetened Toasted Coconut Chips
5 oz Baby Spinach
4 each Pieces Naan Bread
1 ½ tbsp Yellow Curry Paste
2 each Single-Use Aluminum Tray
How to make it
1
Preheat the oven to 450°F. Rinse and dry the spinach. Drain and rinse the chickpeas. In a bowl, whisk together the tomato sauce, cream, and as much curry paste as you like. Between two trays, divide the spinach, drained chickpeas, tomato-curry mixture, and half the curry powder. Season and stir thoroughly.
2
Pat the chicken dry and place in an even layer on top of the base. Season with salt, pepper, and the remaining curry powder; turn to coat. Cover tightly with foil and bake 22-24 minutes until the liquid is slightly thickened and the chicken is cooked through. USDA minimum: 165°F for chicken. Remove the foil and stir.
3
Wrap the naan in foil and place on an oven rack. Warm 7-9 minutes until heated through. Carefully unwrap. Serve the baked trays topped with coconut chips, with the warmed naan on the side.
