How to make it
- Heat the oven to 450°F. Rinse and pat the produce dry, then dice the potatoes. Smash or grate the garlic into a paste. In a small bowl, whisk together the soy glaze, cumin-Sichuan sauce, and half the vinegar.
- Line a sheet pan with foil. Add the diced potatoes, drizzle with sesame oil, season with salt and pepper, and toss to coat. Spread them across one half of the pan.
- Mix the pork, breadcrumbs, garlic paste, and egg with salt and pepper until just combined. Pack it into a tight loaf about 3 inches wide on the empty side of the pan. Brush half the glaze over the top, keeping the raw meat away from the remaining glaze. Roast 18 to 22 minutes, until the potatoes pierce easily and the loaf is cooked through (the USDA recommends 160°F for pork). Let it rest at least 2 minutes.
- Meanwhile, slice the scallions, keeping the white bottoms and green tops separate. Trim off the bok choy root, then chop it, separating the stems from the leaves.
- Warm a little olive oil in a nonstick pan over medium-high. Add the bok choy stems and scallion whites, season, and cook 2 to 3 minutes until softened. Stir in the leaves and the remaining vinegar, season again, and cook 1 to 2 minutes until wilted. Turn off the heat.
- Slice the rested meatloaf crosswise. Plate it with the roasted potatoes and bok choy, spoon the remaining glaze over the meat, and scatter the scallion greens on top.
