Ground Turkey and Sweet Potato Skillet
Ingredients
- 2 tbspolive oil
- 2medium sweet potatoes, peeled and diced small
- 1 lbground turkey, 93 percent lean
- 1yellow onion, diced
- 3garlic cloves, minced
- 1 tspsmoked paprika
- 1 tspground cumin
- 1 tspchili powder
- 1 tspkosher salt
- 1/2 tspblack pepper
- 3 cupbaby spinach
- 1/4 cupwater
Instructions
- 1Soften the sweet potatoesHeat 1 tablespoon of the olive oil in a large skillet over medium heat. Add the diced sweet potatoes, splash in the water, and cover the pan. Cook for about 8 minutes, stirring once or twice, until the potatoes are just tender, then scrape them onto a plate.
- 2Brown the turkeyAdd the remaining tablespoon of oil to the same skillet and raise the heat to medium high. Add the ground turkey and cook for 5 to 6 minutes, breaking it into crumbles, until it is browned and no longer pink.
- 3Add aromatics and spicesStir in the diced onion and cook for 3 minutes until it softens. Add the garlic, smoked paprika, cumin, chili powder, salt, and black pepper, and stir for another minute until everything smells fragrant.
- 4Bring it togetherReturn the sweet potatoes to the skillet and toss gently so they warm through and soak up the seasoning, about 3 minutes. The potatoes should be fork tender with a few caramelized edges.
- 5Wilt the spinach and servePile the baby spinach on top and stir until it wilts down, about 2 minutes. Taste and add a little more salt if it needs it, then serve the skillet hot straight from the pan.
