Rinse and dry all produce. Thinly slice the mushrooms. Heat a drizzle of olive oil in a large high-sided pan over medium-high. Add the sausage and break it apart. Cook undisturbed 4-5 minutes until lightly browned. Add the mushrooms; season. Cook stirring occasionally 3-4 minutes until browned and the sausage is cooked through.
