Ingredients
8 oz No Added Hormones Cooked Pork Belly
2 each Pasture-Raised Eggs
ยฝ lb Ramen Noodles
2 ear Corn
4 oz Mushrooms
1 each Persian Cucumbers
2 each Scallions
1 piece Ginger
1 tbsp Sweet White Miso Paste
1 oz Salted Butter
3 tbsp Soy-Miso Sauce
1 tbsp Mirin (salted cooking wine)
2 tsp Honey
2 tsp Gochujang
1 tsp Furikake
How to make it
1
Bring a medium pot of water to a boil. Rinse and dry all produce. Remove the mushroom stems and thinly slice the caps. Slice the scallions, keeping the white bases and green tops separate. Shuck the corn and cut off the kernels. Peel and chop the ginger. Halve the cucumbers lengthwise, thinly slice crosswise, and toss with sesame oil and vinegar in a bowl to marinate. In a bowl, whisk together the miso paste, butter, and a splash of hot water to make the sauce.
2
Add the eggs to the boiling water. Cook 7 minutes for soft-boiled. Transfer to a strainer with a slotted spoon and rinse under cold water 30-60 seconds (keep the water boiling). Peel when cool enough to handle.
3
Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the mushrooms in an even layer. Cook undisturbed 3-4 minutes until browned. Add the ginger, white scallion bases, and corn; season. Cook stirring occasionally 2-3 minutes until softened. Transfer to the bowl of sauce and toss. Wipe out the pan.
4
Add the noodles to the boiling water, stirring to separate. Cook stirring occasionally 3-5 minutes until tender. Drain and rinse under cold water 30-60 seconds. Transfer to the bowl of vegetables and sauce; toss. Taste and season.
5
Pat the pork belly dry. Place fat-cap up and cut crosswise into 1/2-inch pieces. Heat the same pan over medium-high. Add the pork belly in an even layer. Cook 4-6 minutes until browned. Flip and cook 3-5 minutes until browned and heated through. Transfer to a paper towel-lined plate. Drain off excess fat. USDA minimum for reheating cooked pork: 140ยฐF.
6
Heat the pan over medium-high. Add the pork belly and gochujang glaze (it may spatter). Cook stirring frequently 30 seconds to 1 minute until thickened and coated. Halve the peeled eggs lengthwise; season. Serve the finished noodles topped with the glazed pork belly, marinated cucumbers, and seasoned eggs. Finish with furikake and green scallion tops.
