Add 2 teaspoons olive oil to the pot over medium. Add the garlic, ginger, and white scallion bases; cook stirring frequently 1-2 minutes until fragrant. Add the choy sum; season. Cook stirring 1-3 minutes until slightly wilted.

Increase heat to high. Add the enoki mushrooms, beef demi-glace, miso paste, soy sauce, and 4 cups water. Bring to a boil, then reduce to medium and simmer 4-5 minutes.

Slice the rested steak thinly against the grain. Add any steak juices to the soup. Toss the sliced steak with the hoisin sauce in a small bowl.

Add the noodles to the large pot of boiling water and cook 1-2 minutes until tender, stirring frequently. Drain thoroughly. Stir the cooked noodles into the soup. Divide between 2 bowls and lay the dressed steak on top. Garnish with the green scallion tops.
