3 oz Baby Spinach
¼ cup Cream
2 tbsp Crème Fraîche
¼ cup Grated Parmesan Cheese
2 each Pocketless Pitas
1 oz Garlic & Herb Flavored Butter
¼ tsp Crushed Red Pepper Flakes
1 each Single-Use Aluminum Tray
How to make it

Preheat the oven to 450°F. Rinse and dry the spinach. Drain and rinse the beans. Lightly oil the tray. Combine the spinach, mushroom duxelles, drained beans, cream (shake the packet), creme fraiche, and as much red pepper flake as you like; season and stir. Add 2 tablespoons water and stir thoroughly. Cover tightly with foil and bake 12 minutes. Remove the foil (leave oven on).

Add the butter and carefully stir to combine. Make 2 shallow wells in the tray. Crack an egg into each; season. Return to the oven uncovered 5-7 minutes until the whites are set and the yolks reach your desired doneness.

Lay the pitas on foil and drizzle with olive oil; season. Stack, wrap in foil, and place on an oven rack. Warm 5-7 minutes until heated through. Carefully unwrap. Serve the tray topped with parmesan, with the warmed pitas on the side.
