2 each Black Bean & Red Pepper Patties
12 oz Potatoes
1 each Yellow Onion
2 each Burger Buns
2 tbsp Mayonnaise
3 tbsp Ketchup
1 oz Sliced Pickled Jalapeño Peppers
½ tbsp Weeknight Hero Spice Blend (Onion Powder, Garlic Powder, Smoked Paprika & Whole Dried Parsley)
2 tbsp Vegetarian Worcestershire Sauce
1 tbsp Sherry Vinegar
2 oz White Cheddar Cheese
2 oz Cheddar Cheese Curds
How to make it

Preheat the oven to 450°F. Line a sheet pan with foil. Rinse and dry all produce. Cut the potatoes into 1/2-inch rounds. Roughly chop the cheese curds. Grate the white cheddar on the large side of a box grater. Spread the potato rounds on the pan; drizzle with olive oil if desired. Season with salt, pepper, and half the spice blend; toss and arrange in an even layer. Roast 20-24 minutes until lightly browned and fork-tender. Remove from the oven (leave oven on). Top with the cheese curds and grated cheddar. Return to the oven 2-3 minutes until the cheese is melted.

Meanwhile, halve, peel, and thinly slice the onion(s). Roughly chop the peppers; wash hands and board immediately after. In a bowl, combine the ketchup, half the mayonnaise, and as much chopped pepper as you like. Taste and season.

Season the patties evenly with the remaining spice blend. Heat a drizzle of olive oil in a nonstick pan over medium-high. Cook the patties 4-6 minutes per side until browned and heated through. Transfer to a plate and cover with foil. USDA minimum: 160°F for beef.

Heat the same pan over medium-high (add olive oil if dry). Add the sliced onion(s); season if desired. Cook stirring occasionally 7-9 minutes until lightly browned and softened. Add the vinegar (it may spatter) and Worcestershire sauce. Cook stirring frequently 30 seconds to 1 minute until combined. Transfer to a bowl. Wipe out the pan.

Add the buns cut-side down to the same pan in batches. Toast over medium-high 30 seconds to 1 minute until lightly browned. Build the burgers with the toasted buns, cooked patties, caramelized onion, and as much sauce as you like. Serve with the cheesy potatoes. Offer any remaining sauce on the side.
