Ingredients
8 oz Rice Cakes
8 oz Broccoli Florets
2 tsp Gochujang
⅓ cup Kimchi
3 tbsp Soy-Miso Sauce
4 oz Mushrooms
1 tsp Black & White Sesame Seeds
2 each Scallions
2 tbsp Crème Fraîche
How to make it
1
Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Thinly slice the mushrooms.
2
Heat a drizzle of olive oil in a medium pot over medium-high. Add the broccoli florets. Cook stirring occasionally 2-3 minutes until lightly browned. Add 1/4 cup water (1/2 cup for 4 servings). Cook stirring occasionally 2-3 minutes until the broccoli is tender and the liquid cooks off. Add the mushrooms and white scallion bases. Cook stirring occasionally 2-3 minutes until softened.
3
Separate the rice cakes by hand. Add the kimchi, soy-miso sauce, 1/3 cup water (2/3 cup for 4 servings), rice cakes, and as much gochujang as you like; season with salt and pepper. Cook stirring occasionally 2-3 minutes until the rice cakes are tender and coated. Remove from heat. Stir in the creme fraiche until combined. Serve topped with the green scallion tops and sesame seeds.
