How to make it
- Preheat the oven to 450°F. Drain and rinse the beans. Rinse and dry the tomatoes. Lightly oil the tray. Combine the drained beans, pepper sofrito, tomatoes, guajillo sauce, and 1 teaspoon water in the tray; season and stir thoroughly. Tear the chorizo into bite-sized pieces and arrange in an even layer. Cover tightly with foil and bake 12 minutes. Remove the foil (leave oven on).
- Press the tomatoes with the back of a spoon to burst; stir. Make 2 shallow wells. Crack an egg into each; season. Top evenly with the cheddar and Monterey Jack. Return to the oven uncovered 5-7 minutes until the chorizo is cooked through, the whites are set, and yolks reach your desired doneness.
- Meanwhile, wrap the tortillas in foil and place on an oven rack. Warm 5-7 minutes until heated through. Carefully unwrap. Serve the tray topped with sour cream, guacamole, and as many peppers as you like. Serve the warmed tortillas on the side.
