How to make it

Take the noodles out of the refrigerator. Rinse and dry all produce. Cut the mushrooms into bite-sized pieces. Trim the broccoli stem and cut into small florets. Trim the bok choy root ends; roughly chop, separating the stems and leaves. Slice the scallions on an angle, keeping the white bases and green tops separate. Peel and roughly chop 2 garlic cloves. In a bowl, combine the soy glaze, soy sauce, vinegar, 1/4 cup water, and up to half the chili crisp.

Heat a drizzle of olive oil in a large pan over medium-high. Add the broccoli and 1/4 cup water (it may spatter). Cook stirring occasionally 2-3 minutes until slightly tender and the water cooks off. Add the mushrooms in an even layer. Cook undisturbed 3-4 minutes until lightly browned. Add the bok choy stems, white scallion bases, and garlic; season. Cook stirring occasionally 2-3 minutes until softened.
