How to make it
- Bring a medium pot of water (3/4 full) to a boil. Rinse and dry all produce. Shuck the corn. Halve, peel, and thinly slice the onion(s). Finely grate the lime zest to get 1 teaspoon (2 tsp for 4 servings). Quarter the limes. In a bowl, combine the cotija, lime zest, and as much spice blend as you like. In a separate bowl, combine the guacamole with the juice of 2 lime wedges (4 wedges for 4 servings).
- Add the corn cobs to the boiling water. Cook 3-4 minutes until bright yellow and slightly tender. Drain, pat dry, and wrap in foil to keep warm.
- Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the sliced onion(s); season with salt and pepper. Cook stirring occasionally 5-6 minutes until softened. Add the pulled chicken (shredded into pieces) and cook stirring occasionally 2-3 minutes until lightly browned and heated through. Taste and season. Wipe out the pan.
- Lay the tortillas flat. Top half of each with the Monterey Jack and filling, then fold closed. Heat a drizzle of olive oil in the same pan over medium. Add the quesadillas in batches. Cook 2-4 minutes per side until golden and cheese is melted, adding oil before flipping if dry. Transfer to a board and cut each into thirds.
- Top the corn with the mayonnaise and cotija-lime seasoning. Serve the quesadillas alongside the corn. Offer the lime guacamole and remaining lime wedges on the side.
