12 oz Potatoes
1 each Red Onion
¼ cup Panko Breadcrumbs
2 tbsp Mayonnaise
2 tsp Chipotle Chile Paste
2 tsp Honey
1 each Poblano Pepper
1 each Lime
How to make it

Heat the oven to 450°F. Rinse and dry all produce. Cut the limes into quarters. Halve and peel the onions, then slice into 1-inch wedges, separating the layers. Cut the potatoes into a medium dice. Remove the stems from the peppers, halve lengthwise, seed and devein, then cut crosswise into 1/2-inch strips. Wash your hands thoroughly after handling the peppers.

Spread the onion wedges, diced potatoes, and pepper strips on a sheet pan. Drizzle with olive oil, season with salt and pepper, and toss to coat in a single layer. Roast 24-26 minutes until browned and fork-tender. Squeeze 2 lime wedges evenly over the roasted vegetables and toss to coat. Air fryer option: 375°F for 18-22 minutes.

Lightly oil the center of a separate sheet pan. Whisk together the honey, mayonnaise, 1 teaspoon warm water (2 tsp for 4 servings), and up to half the chile paste to your heat preference. Pat the protein dry, season both sides with salt and pepper, and place on the oiled pan. Spread half the chipotle mayo on top (keep the remaining mayo away from the raw protein), then press on the breadcrumbs to adhere. Drizzle with olive oil.

Roast 18-22 minutes until the breadcrumbs are golden and the protein is cooked through. Serve over the roasted vegetables, top with the remaining chipotle mayo, and offer the remaining lime wedges on the side. USDA recommended minimum internal temperature: 165°F for poultry.
