Heat the oven to 450°F. Rinse and dry all produce. Cut the limes into quarters. Halve and peel the onions, then slice into 1-inch wedges, separating the layers. Cut the potatoes into a medium dice. Remove the stems from the peppers, halve lengthwise, seed and devein, then cut crosswise into 1/2-inch strips. Wash your hands thoroughly after handling the peppers.
