½ cup Biscuit Mix
¼ cup Sour Cream
2 tbsp Soy Glaze
2 tbsp Vegetarian Worcestershire Sauce
2 oz Shredded Monterey Jack Cheese
How to make it

Preheat the oven to 425°F. Rinse and dry all produce. Trim the broccoli stem and cut into small florets. In a bowl, combine the soy glaze, Worcestershire sauce, and 1/4 cup water (1/2 cup for 4 servings); season if desired.

Line a sheet pan with foil. Spread the broccoli, drizzle with olive oil, season if desired, and toss to coat. Roast 14-18 minutes until browned and fork-tender. Air fryer option: 375°F for 7-9 minutes.

In a bowl, combine the biscuit mix, sour cream, half the Monterey Jack, and 1 tablespoon water (2 tbsp for 4 servings). Gently stir until just combined — do not overmix. Lightly oil a sheet pan. Scoop into 2 equal dollops (4 for 4 servings); top with the remaining Monterey Jack. Bake 14-16 minutes until set and cooked through.

Pat the steaks dry; season both sides with salt and pepper. Heat a drizzle of olive oil in a nonstick pan over medium-high. Cook 4-6 minutes per side for medium-rare (125°F) or to your desired doneness. Transfer to a board and rest 5 minutes. USDA minimum: 145°F for steak. Slice crosswise against the grain. Leave the fond.

Add the sauce to the pan of fond (it may spatter). Cook over medium-high, stirring frequently and scraping up the fond, 2-3 minutes until slightly reduced. For thicker cook longer; for thinner add water 1 tablespoon at a time. Season with pepper. Serve the sliced steaks with the biscuits and roasted broccoli. Top the steaks with the sauce.
