Ingredients
10 oz Hot Italian Pork Sausage
4 oz Orzo Pasta
1 each Fennel Bulb
ΒΌ cup Grated Parmesan Cheese
1 tbsp Sherry Vinegar
2 each Scallions
ΒΌ cup Panko Breadcrumbs
1 each 8-oz can Tomato Sauce
1 oz Garlic & Herb Flavored Butter
How to make it
1
Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Remove any fennel stems; halve, core, and medium dice the bulb. Slice the scallions, keeping the white bases and green tops separate.
2
In a bowl, combine the sausage and breadcrumbs; gently mix. Shape into 10 tightly packed meatballs. Heat a drizzle of olive oil in a large pan over medium-high. Add the meatballs. Cook turning occasionally 5-7 minutes until lightly browned on all sides (oil may spatter).
3
Meanwhile, add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until tender. Drain and return to the pot. Add the butter and a drizzle of olive oil; stir until the butter melts.
4
Heat a drizzle of olive oil in the same pan over medium-high. Add the diced fennel and white scallion bases; season with salt and pepper. Cook stirring occasionally 3-4 minutes until softened. Return the meatballs and any sauce to the pan. Cook stirring frequently 2-3 minutes until the meatballs are cooked through. Serve the pasta topped with the meatballs and sauce. Finish with the green scallion tops and parmesan.
