Preheat the oven to 450ยฐF. Rinse and dry all produce. Lightly oil the baking tray. Add the peppers (torn into bite-sized pieces), tomatoes, corn, tomato paste, and gnocchi. Pour in 1/2 cup water per tray. Season with salt and pepper and stir thoroughly to combine.

Tear the sausage into bite-sized pieces and arrange over the top in an even layer. Cover tightly with foil and bake 30 minutes until the sausage is cooked through. Leave the oven on and remove the tray.

Remove the foil and stir in the creme fraiche. Scatter half the cheddar and Monterey Jack evenly over the top. Return to the oven uncovered for 5-7 minutes until the cheese is melted. Let stand at least 3 minutes before serving.
