How to make it
- Preheat the oven to 450°F. Rinse and dry all produce. Rinse and drain the rice. Drain and rinse the beans. Between two trays, divide the spinach, rice, tomatoes, caramelized onions, drained beans, chile paste, and cream. Add 1 cup water per tray. Season and stir thoroughly.
- Cover the trays tightly with foil and bake 40 minutes. Remove the foil (leave oven on). Top evenly with the cheese. Return to the oven uncovered 4-6 minutes until the cheese is melted.
- Wrap the tortillas in foil and place on an oven rack. Warm 7-9 minutes until heated through. Carefully unwrap. Serve the baked trays topped with guacamole and as many peppers as you like. Serve the warmed tortillas on the side.
