Take the honey out of the refrigerator. Position a rack in the center of the oven and heat to 450°F. Rinse and dry the tomatoes. Drain and rinse the beans. In the tray, combine the drained beans, guajillo sauce, mirepoix, spice blend, tomatoes, and tomato paste; season. Add 1/2 cup water and stir thoroughly. Cover tightly with foil and bake 10 minutes. Leave the oven on and remove.

Meanwhile, in a bowl, combine the egg, cornbread mix, and 2 tablespoons water; season. Stir until just combined.

Remove the foil. Top evenly with the cheese. Drop 4 equal dollops of batter on top. Press in as many peppers as you like (wash hands immediately after). Return to the oven uncovered 8-10 minutes until the cornbread is cooked through and the chili is thickened. Serve topped with sour cream. Top the cornbread with the honey (knead the packet first).
