4 oz Snow Peas
2 tbsp Mayonnaise
3 tbsp East Asian-Style Sautéed Aromatics
1 tsp Black & White Sesame Seeds
4 oz Mushrooms
2 tbsp Hoisin Sauce
1 each Single-Use Aluminum Tray
How to make it

Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Remove tough strings from snow peas if desired. Rinse and drain the rice. In the tray, combine the rice, sauteed aromatics, mushrooms (torn into pieces), and 1 cup water. Season and stir thoroughly.

Cover tightly with foil and bake 22 minutes. Remove the foil (leave oven on) and stir. Make 2 shallow wells. Crack an egg into each; season. Add the snow peas in an even layer around the eggs; drizzle with olive oil. Return to the oven uncovered 5-7 minutes until the whites are set and yolks reach your desired doneness.

In a bowl, combine the hoisin sauce and mayonnaise. Serve the baked tray drizzled with the hoisin mayo. Top with sesame seeds.
