Ingredients
10 oz Ground Beef
2 each Pasture-Raised Eggs
ยฝ lb Udon Noodles
4 oz Mushrooms
4 oz Shredded Cabbage & Carrots
4 oz Snow Peas
3 tbsp Soy Glaze
1 tbsp Sambal Oelek
1 tbsp Smooth Peanut Butter Spread
1 tsp Black & White Sesame Seeds
2 clove Garlic
How to make it
1
Take the noodles out of the refrigerator. Rinse and dry all produce. Thinly slice the mushrooms. Peel and roughly chop 2 garlic cloves (4 for 4 servings). In a bowl, combine the peanut butter spread, soy glaze, 1/2 cup water (1 cup for 4 servings), and as much sambal oelek as you like. Remove tough strings from snow peas if desired.
2
Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the beef; season. Cook stirring frequently, breaking the meat apart, 5-7 minutes until browned and cooked through. Drain off excess oil. Transfer to a large bowl. Use the same pan.
3
Heat a drizzle of olive oil in the same pan over medium-high. Add the mushrooms, cabbage and carrots, snow peas, and garlic; season. Cook stirring occasionally 2-3 minutes until slightly softened.
4
Separate the noodles by hand. Add the noodles and sauce to the pan (it may spatter); season. Cook stirring constantly 2-3 minutes until combined and the noodles are heated through. Add the cooked beef; stir to combine.
5
Heat a drizzle of olive oil in the same pan over medium-high. Crack the eggs into the pan, keeping them separate; season. Cook 4-5 minutes until the whites are set and yolks reach your desired doneness. Serve the finished stir-fry topped with the fried eggs. Top with sesame seeds.
