Ingredients
4 each Top Sirloin Steaks
2 tbsp Mayonnaise
12 oz Gnocchi
2 clove Garlic
6 oz Green Beans
1 each Shallot
ΒΌ tsp Crushed Red Pepper Flakes
1 tbsp Capers
How to make it
1
Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry the green beans; snap off stem ends. Peel and thinly slice the shallot. Peel 2 garlic cloves. Roughly chop 1; finely grate the other into a paste. In a bowl, combine the mayonnaise and as much garlic paste as you like; season with salt and pepper.
2
Pat the steaks dry and season both sides with salt and pepper. Heat a drizzle of olive oil in a large pan over medium-high. Cook turning occasionally 8-10 minutes for medium-rare (145Β°F) or to your desired doneness. Transfer to a board and rest 5 minutes. Leave the fond.
3
Add the green beans to the boiling water. Cook 2-3 minutes until bright green and slightly tender. Transfer to a paper towel-lined plate (keep the water boiling). Heat a drizzle of olive oil in the pan of fond over medium-high. Add the sliced shallot and cook stirring occasionally 1-2 minutes until lightly browned. Add the green beans; season. Cook stirring occasionally 1-2 minutes until lightly browned. Transfer to a bowl and cover with foil. Wipe out the pan.
4
Add the gnocchi to the boiling water. Cook 2-3 minutes until they float to the top. Drain.
5
Heat 1 tablespoon olive oil in the same pan over medium-high. Add the gnocchi in an even layer. Cook undisturbed 2-3 minutes until lightly browned. Season. Add the chopped garlic, capers, and as much red pepper flake as you like. Cook stirring occasionally 1-2 minutes until combined. Taste and season.
6
Slice the steaks crosswise against the grain. Serve with the finished gnocchi and green beans. Top the steaks with the aioli.
