10 oz Ground Pork
½ lb Lo Mein Noodles
10 oz Baby Bok Choy
2 clove Garlic
1 tbsp Soy Sauce
1 tsp Black & White Sesame Seeds
2 tbsp Tahini
6 oz Carrots
3 tbsp Savory Black Bean-Chile Sauce
1 tbsp Seasoned Black Vinegar
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Peel the carrots; halve lengthwise and thinly slice on an angle. Trim the bok choy root ends and thinly slice. Peel and roughly chop 2 garlic cloves. In a bowl, combine the black bean-chile sauce, soy sauce, vinegar, tahini, and 2 tablespoons water.

Heat a drizzle of olive oil in a large pan over medium-high. Add the carrots. Cook stirring occasionally 3-4 minutes until slightly softened. Add the bok choy and garlic. Cook stirring occasionally 1-2 minutes until slightly softened. Transfer to a bowl; cover with foil. Taste and season. Wipe out the pan.

Add the noodles to the boiling water, stirring to separate. Cook stirring occasionally 2-4 minutes until tender. Drain and rinse under warm water 30-60 seconds.

Heat a drizzle of olive oil in the same pan over medium-high. Add the pork. Cook undisturbed 3-4 minutes until lightly browned; season. Continue stirring frequently, breaking the meat apart, 3-4 minutes until browned. Add the sauce (it may spatter). Cook stirring frequently 1-2 minutes until the pork is coated and cooked through. Remove from heat. Stir in the cooked vegetables and noodles until combined. Taste and season. Serve topped with sesame seeds.
