½ cup Sushi Rice
6 oz Carrots
1 each Avocado
1 each Bell Pepper
1 each Lemon
½ tbsp Togarashi Seasoning (Sweet Paprika, Hot Paprika, Dried Orange Peel, Poppy Seeds, White Sesame Seeds & Black Sesame Seeds)
2 tsp Gochujang
1 tbsp Sesame Oil
1 tbsp Mirin (salted cooking wine)
3 tbsp Roasted Peanuts
3 tbsp Savory Black Bean-Chile Sauce
1 tsp Black & White Sesame Seeds
2 tsp Honey
How to make it

Preheat the oven to 450°F. Drain the tofu and place on a paper towel-lined plate. Cover with several layers of paper towels and press with a heavy pot or pan. Let press at least 10 minutes.

Rinse and dry all produce. Stem the peppers, halve lengthwise, seed, and thinly slice crosswise. Halve and pit the avocado(s); scoop out and thinly slice. Season with salt and pepper. Peel the carrots and grate on the large side of a box grater; toss with vinegar, sesame oil, and a pinch of sugar in a bowl. In a separate bowl, combine the soy glaze, chili paste, and honey for the glaze.

Line a sheet pan with foil. Break the pressed tofu into bite-sized pieces. Transfer to the pan; drizzle with olive oil and season with salt, pepper, and togarashi. Toss carefully to coat. Arrange in an even layer. Roast 24-26 minutes until slightly crispy. Transfer to the bowl of glaze; toss. Taste and season.

Rinse and drain the rice. Combine with a big pinch of salt and 3/4 cup water (1 1/2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 15-17 minutes until absorbed. Fluff and cover to keep warm.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the sliced peppers in an even layer. Cook undisturbed 2-3 minutes until lightly browned; season. Continue stirring occasionally 2-3 minutes until softened. Add the juice of the remaining lemon wedges; stir. Serve the rice topped with the glazed tofu, marinated carrots, seasoned avocado, and cooked peppers. Top with sesame seeds and peanuts.
