Preheat the oven to 450°F. Rinse and dry all produce. Line a sheet pan (or 2 for 4 servings) with foil. Place the tortillas on the foil and prick all over with a fork. Drizzle with olive oil, season if desired, and turn to coat. Top evenly with the corn and cheddar and Monterey Jack. Toast 5-7 minutes until the tortillas are lightly browned and crispy and the cheese is melted.

Microwave on high 2-3 minutes until heated through. Mash with a potato masher or fork until combined and slightly thickened. Stir in the sour cream. Taste and season.

In a medium bowl, whisk together the honey, mayonnaise, vinegar, and a drizzle of olive oil; season with salt and pepper. Add the cabbage and carrots and stir to combine. Build the tostadas with the toasted tortillas, mashed beans, guacamole, cotija, torn cilantro leaves, and as many peppers as you like. Serve with the slaw on the side.
