How to make it

Position a rack in the center of the oven and heat to 450ยฐF. Rinse and dry the spinach. Season the tomato sauce with salt, pepper, and the oregano; stir to combine. Spread about 1/3 of the seasoned tomato sauce in a thin layer on the bottom of the tray. Layer with spinach, then pasta sheets (trim to fit if needed). Repeat with another layer of sauce, spinach, then spread the ricotta and half the fontina evenly. Add a final layer of pasta sheets, remaining tomato sauce, and spinach. Top with the mozzarella (torn into small pieces). Season with salt and pepper.

Cover tightly with foil and bake 12 minutes. Remove the foil and return to the oven 4-6 minutes until the cheese is melted and the pasta is cooked through. Let stand 3 minutes. Serve drizzled with the pesto.
