How to make it

Bring a large pot of salted water to a boil. Rinse and dry all produce. Roughly chop the Chinese broccoli. Peel and mince the garlic and ginger. Slice the scallions on an angle. Quarter the lime. Press excess water from the tofu with paper towels, then cut into 1-inch cubes. Trim the lemongrass ends, peel away the fibrous outer layers, and finely chop the white pliable core.

Add the soba noodles to the boiling water. Cook 4-6 minutes until tender. Meanwhile, in a large bowl, combine the mirin, soy sauce, sesame oil, half the scallions, and the juice of 2 lime wedges; season. Drain the noodles and rinse under cold water. Add to the dressing and toss to coat.

Season the tofu with salt and pepper. Heat a thin layer of oil in a nonstick pan over medium-high. Add the tofu and cook 8-10 minutes until browned on all sides, stirring occasionally. Season; transfer to a paper towel-lined plate. Wipe out the pan.

Heat a drizzle of oil in the same pan over high. Add the Chinese broccoli, garlic, ginger, lemongrass, and whole birdseye chilis; season. Cook stirring occasionally 3-5 minutes until the broccoli is bright green and slightly wilted.

Add the hoisin sauce, 1/4 cup water, and browned tofu. Cook stirring occasionally 30 seconds to 1 minute until combined and heated through. Taste and season. Remove whole chilis before plating if desired.

Toss the noodles in the dressing once more. Divide between 2 plates. Top with the tofu and Chinese broccoli. Garnish with the remaining lime wedges and scallions.
