2 tbsp Mango Chutney
2 clove Garlic
6 oz Green Beans
1 ½ tsp Brown & Yellow Mustard Seeds
2 tsp Vadouvan Curry Powder
2 tbsp Crème Fraîche
How to make it

Rinse and drain the rice. Heat a drizzle of olive oil in a small pot over medium-high. Add the mustard seeds and rice. Cook stirring frequently 1-2 minutes until lightly toasted (seeds may pop). Add a big pinch of salt and 1 cup water (it may spatter). Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff and cover to keep warm.

Meanwhile, rinse and dry the green beans; snap off stem ends. Peel 1 garlic clove and finely grate into a paste. In a bowl, combine the mango chutney and 1/4 cup water.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the green beans in an even layer; season. Cook undisturbed 4-5 minutes until lightly browned. Add 2 tablespoons water (it may spatter). Cook stirring occasionally 3-4 minutes until softened and the water cooks off. Remove from heat. Add a drizzle of olive oil and as much garlic paste as you like; stir. Taste and season. Transfer to a bowl and cover with foil. Wipe out the pan.

Pat the chicken dry; season both sides with salt, pepper, and enough curry powder to coat. Heat a drizzle of olive oil in the same pan over medium-high. Cook 6-7 minutes per side until browned and cooked through. USDA minimum: 165°F for chicken. Transfer to a board, leaving the fond.

Add the sauce to the pan of fond (it may spatter). Cook stirring frequently and scraping up the fond 30 seconds to 1 minute until slightly thickened. Remove from heat and stir in the creme fraiche. Taste and season. Slice the chicken crosswise. Serve with the mustard seed rice and green beans. Top the chicken with the sauce.
