Ingredients
10 oz Boneless Chicken Breast Pieces
2 each Flour Tortillas
1 ½ oz Feta Cheese
4 oz Grape Tomatoes
1 each Persian Cucumbers
½ cup Tzatziki (cucumber-yogurt sauce)
1 tbsp Red Wine Vinegar
1 oz Pitted Niçoise Olives
1 tsp Whole Dried Oregano
How to make it
1
Rinse and dry all produce. Halve the tomatoes. Quarter the cucumbers lengthwise and thinly slice crosswise. Roughly chop the olives. In a large bowl, combine the tomatoes, cucumbers, olives, vinegar, and crumbled feta. Season and toss to coat.
2
Pat the chicken dry and place in a bowl. Season with salt, pepper, and the oregano; toss. Heat a drizzle of olive oil in a nonstick pan over medium-high. Add in an even layer. Cook undisturbed 3-4 minutes until lightly browned. Continue stirring occasionally 3-4 minutes until browned and cooked through. USDA minimum: 165°F for chicken.
3
Add the cooked chicken to the salad bowl; toss to combine. Wrap the tortillas in a damp paper towel and microwave 1 minute until heated through and pliable. Lay flat. Spread 1 tablespoon tzatziki onto each. Divide the salad (discarding liquid) among the bottom half of each tortilla. Fold the three adjacent sides over the filling, then roll away from you, tucking in the sides, into a wrap. Halve on an angle, seam-side down.
