10 oz Cooked Farro
3 oz Fire Grilled Corn
1 tbsp Ancho Chile Paste
1 oz Tomato & Chipotle Flavored Butter
1 tbsp Maple Syrup
2 tbsp Grated Cotija Cheese
1 bunch Cilantro
How to make it

Take the butter out to soften. Preheat the oven to 450°F. Rinse and dry all produce. Line a sheet pan with foil. Pat the pork dry and season both sides with salt and pepper. In a bowl, whisk together the maple syrup, 1 tablespoon water (2 tbsp for 4 servings), and as much chile paste as you like. Place the pork on the pan, drizzle with olive oil, season with salt and pepper, and spread half the glaze on top (keep remaining glaze separate from raw meat). Bake 12-14 minutes for medium or to your desired doneness. USDA minimum: 145°F for pork.

Add the softened butter and stir until melted and combined. Taste and season. Serve the farro topped with the baked pork. Drizzle the remaining glaze over the top and finish with cotija and torn cilantro leaves.
