Take the noodles out of the refrigerator to come to room temperature. Preheat the oven to 450°F. Rinse and dry all produce. In a small baking dish (large for 4 servings), whisk together the miso paste, sauteed aromatics, soy-miso sauce, and 1/4 cup water (1/2 cup for 4 servings); season with salt and pepper.

Separate the noodles by hand. Add the spinach, mushrooms (torn into bite-sized pieces), and noodles to the sauce; season and stir to combine thoroughly. Tear the pork into pieces and arrange on top in an even layer; season with salt and pepper. Cover tightly with foil and bake 22-25 minutes. Remove the foil and bake 5-7 minutes more until the pork is cooked through. Let stand 2 minutes, stir thoroughly, and serve with sesame seeds on top.
