3 tbsp Sweet Chili Sauce
2 tbsp Mayonnaise

Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed and tender. Fluff with a fork.

Add the sliced peppers and scallions; season with salt and pepper. Cook stirring occasionally 2-3 minutes until slightly softened. Transfer to the pot of rice and stir to combine. Cover to keep warm. Wipe out the pan.

When a pinch of cornstarch sizzles immediately, add the coated chicken in an even layer (discard excess starch). Cook undisturbed 3-4 minutes until lightly browned. Continue stirring frequently 3-4 minutes until browned and cooked through. USDA minimum: 165°F for chicken.
