How to make it

Preheat the oven to 400°F. Rinse and dry all produce. Bring a small pot of salted water to a boil. Cut the potatoes into 1/2-inch rounds. Peel and thinly slice the onion. Halve the rolls horizontally. In a small bowl, combine the mayonnaise and horseradish; season.

Add the potatoes to the boiling water. Cook 12-14 minutes until fork-tender. Drain and transfer to a large bowl. Add the mustard, one-third of the arugula, and all but a splash of the vinegar. Toss to coat and season. Set aside. Wipe out the pot.

Heat 2 teaspoons olive oil in a nonstick pan over medium-high. Add the onion and cook stirring frequently 10-12 minutes until completely softened and deeply browned (add 1 tablespoon water and reduce heat if it starts to burn).

Separate the shaved beef layers by hand. Add to the pan of caramelized onion with 1/4 cup water. Cook stirring frequently 3-5 minutes until just cooked through. Remove from heat; season.

In the same pot, combine the beef demi-glace, remaining splash of vinegar, and 1/4 cup water. Cook over high, stirring occasionally, 2-3 minutes until it comes to a boil. Remove from heat. Taste and season.

Place the rolls cut-side up on a sheet pan. Toast in the oven 4-6 minutes until lightly browned and crispy. Top with the cooked beef and caramelized onion, horseradish mayo, and remaining arugula. Divide the sandwiches and potato salad between 2 plates. Serve with the jus for dipping.
