Preheat the oven to 400°F. Rinse and dry all produce. Cut the potatoes into 1-inch wedges. Halve the zucchini lengthwise and thinly slice crosswise. Halve, peel, and medium dice the onion(s). In a bowl, combine the labneh and a pinch of the spice blend; season with salt and pepper.

Line a sheet pan with foil. Spread the potato wedges on the foil, drizzle with olive oil, season with salt, pepper, and the remaining spice blend, and toss to coat. Roast 22-26 minutes until browned and fork-tender. Air fryer option: 400°F for 12-15 minutes.
